ถึง = to reach กับ = with > to reach a certain point or degree > to a certain extent

I think that ถึงกับ really adds something to the meaning.

You haven't translated พอดี.
As an Englishman, small talk on weather, should be my forte, this seems to say; I am quite happy with the temperature (พอดี) It hasn't got to the point of what I would consider not พอดี.
Thai visiting Europe perhaps.
