Anyone know the correct classifiers for the sticky rice you buy in those clear plastic food bags for 5 or 10 baht each and also the bamboo sticks of barbecued meat?

The classifier for "สะเต๊ะ" (skewers of barbeque) is "ไม้" (stick). Here are several sample sentences:

"อยากถามว่า ทำไมหมูสะเต๊ะถึงแพงจัง ต้นทุนมันต่างกับหมูปิ้งมากเลยหรอครับ แล้วปกติท่านซื้อกันชุดละเท่าไหร่ และได้กี่ไม้"
[I would like to ask why pork skewers are so expensive. Is the initial cost so different from that of grilled pork? And, usually how much do you pay for a set of pork skewers and how many skewers do you get per order?]

"ตอนนี้เจอแบบราคาถูกสุดก็ 5 บาทต่อไม้ครับ แต่มีบ้างที่ไม้ละ 3.50"
[Nowadays we can find them for sale inexpensively for five baht per skewer but some sellers sell for only 3.50 baht per skewer.]

As for the sticky rice in small plastic bags, I assume you are talking about cooked rice, ready-to-eat. I believe the classifier is "ถุง" as in the following sentence:

"ข้าวเหนียวนึ่งถุงละ 5 บาทไม่มีแล้ว หลังข้าวกระสอบราคาพุ่งไม่หยุด"
[You can no longer find cooked sticky rice sold for five baht each after the price of [sticky] rice in hundred-kilo sacks continues to rise unabated.]
